Ingredients:

Instructions:

1. Prepare the Herb Butter:
- In a small bowl, combine the butter, minced garlic, finely chopped chives, and finely chopped fresh parsley. Mix well until fully blended.
- Transfer the herb butter onto a piece of plastic wrap, shape it into a small log, and refrigerate until firm (about 15-20 minutes).
2. Prepare the Salmon:
- Meanwhile, cut the salmon into even fillets, about 4 to 6 pieces depending on size. Make a slit in the center of each fillet, creating a pocket for the herb butter.
3. Fill the Salmon:
- Take the firm herb butter out of the refrigerator and cut it into pieces just long enough to fit inside the pockets of the salmon fillets.
- Insert a piece of herb butter into each pocket. Fold the fillets over to seal in the butter, using toothpicks if necessary to secure them.
4. Set Up a Breading Station:
- Place the flour in a shallow dish.
- Beat the eggs in a second shallow dish.
- Spread the bread crumbs in a third shallow dish.
5. Bread the Salmon:
- First, dredge each filled salmon fillet in the flour, making sure it is evenly coated.
- Next, dip the floured salmon into the beaten eggs, allowing any excess to drip off.
- Finally, coat the salmon fillet with bread crumbs, pressing lightly to ensure they adhere well.
6. Cook the Salmon Kyiv:
- Preheat your oven to 375°F (190°C).
- Heat a large oven-safe skillet over medium heat. Add a little oil to the skillet, enough to coat the bottom.
- Place the breaded salmon fillets in the skillet. Cook for about 3-4 minutes on each side, or until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and the internal temperature reaches 145°F (63°C).
7. Serve:
- Remove the salmon from the oven and let it rest for a few minutes.
