Ingredients:

2 tbsp butter
2 garlic cloves
1 tsp chives
1 tbsp fresh parsley
1.50 lb salmon
1/4 cup all-purpose white wheat flour
2 eggs
1 cup bread crumbs

Salmon Kyiv is a delightful twist on the classic Chicken Kyiv, featuring succulent salmon fillets instead of poultry. This dish marries the richness of butter and herbs with the tenderness of fresh salmon, resulting in a mouthwatering experience perfect for an elegant dinner or a special occasion. Instructions:

1. Prepare the Herb Butter:
- In a small bowl, combine the butter, minced garlic, finely chopped chives, and finely chopped fresh parsley. Mix well until fully blended.
- Transfer the herb butter onto a piece of plastic wrap, shape it into a small log, and refrigerate until firm (about 15-20 minutes).
2. Prepare the Salmon:
- Meanwhile, cut the salmon into even fillets, about 4 to 6 pieces depending on size. Make a slit in the center of each fillet, creating a pocket for the herb butter.

- Place the flour in a shallow dish.
- Beat the eggs in a second shallow dish.
- Spread the bread crumbs in a third shallow dish.
5. Bread the Salmon:
- First, dredge each filled salmon fillet in the flour, making sure it is evenly coated.
- Next, dip the floured salmon into the beaten eggs, allowing any excess to drip off.
- Finally, coat the salmon fillet with bread crumbs, pressing lightly to ensure they adhere well.
6. Cook the Salmon Kyiv:
- Preheat your oven to 375°F (190°C).
- Heat a large oven-safe skillet over medium heat. Add a little oil to the skillet, enough to coat the bottom.
- Place the breaded salmon fillets in the skillet. Cook for about 3-4 minutes on each side, or until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the salmon is cooked through and the internal temperature reaches 145°F (63°C).
7. Serve:
- Remove the salmon from the oven and let it rest for a few minutes.
- Serve the Salmon Kyiv hot, garnished with additional fresh parsley or chives if desired. Enjoy!
