4. Prepare the Egg Mixture:
- In a large bowl, whisk together the 12 beaten eggs and 1/4 cup coconut milk until well combined.
- Add the roughly chopped spinach to the egg mixture and mix well.

- Pour the sausage and sweet potato mixture into a greased 9x13-inch baking dish.
