Instructions:

- Start by washing and preparing all your vegetables. Chop the onion, mince the garlic, peel and dice the potatoes, dice the carrots and slice the celery, and chop the tomatoes.
2. Heat the Olive Oil:
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
3. Cook the Aromatics:
- Add the chopped onion to the pot and cook, stirring occasionally, for about 3-5 minutes or until it becomes translucent.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
4. Add Vegetables:
- Add the diced potatoes, carrots, and celery to the pot. Cook for about 5-7 minutes, stirring occasionally, to let the vegetables begin to soften.
5. Incorporate Tomatoes and Curry Paste:
- Stir in the chopped tomatoes and 1 tablespoon of curry paste. Mix well to coat all the vegetables with the curry paste.
6. Pour in the Chicken Gravy:
- Add the 4 cups of chicken gravy to the pot. Bring the mixture to a boil.
7. Simmer the Soup:
- Once boiling, reduce the heat to low and let the soup simmer for about 20-25 minutes, or until the potatoes and carrots are tender.
8. Add the Lentils:
- Stir in the drained and rinsed 1/2 cup of canned lentils. Continue cooking for an additional 5 minutes to allow the lentils to heat through.
