Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, turn the cakes out onto a wire rack to cool completely.
8. Prepare the Lemon Whipped Cream:
In a chilled bowl, whip the heavy whipping cream with the lemon zest until stiff peaks form.
9. Assemble the Cake:
Place one of the cooled sponge cakes on a serving plate. Spread half of the lemon whipped cream over the top. Arrange half of the sliced strawberries on top of the whipped cream. Place the second sponge cake on top and repeat the process by spreading the remaining lemon whipped cream and arranging the remaining strawberries on top.
