Ingredients:

Instructions:

1. Prepare the Dough:
- In a large mixing bowl, combine the baking powder and salt.
- Add the Greek yogurt to the bowl. Mix until the ingredients are well combined and form a sticky dough.

- Stir in the minced garlic, fresh thyme, and rosemary. Knead the dough gently to ensure the herbs and garlic are evenly distributed.
3. Form the Flatbreads:
- Divide the dough into 6-8 equal portions, depending on your desired size.
- Lightly flour your work surface and roll each portion into a ball. Flatten each ball with your hands or a rolling pin into a thin disc, about 1/4-inch thick.
4. Cook the Flatbreads:
- Heat a non-stick skillet or cast-iron pan over medium heat.
- Add a small amount of olive oil to the skillet to lightly coat the surface.
- Place one of the dough discs in the hot skillet. Cook for about 2-3 minutes, until bubbles form on the surface and the bottom is golden brown.
- Flip the flatbread and cook the other side for an additional 2-3 minutes until golden brown and cooked through.
- Repeat the process with the remaining dough discs, adding more olive oil to the skillet as needed.
5. Serve:
- Once cooked, transfer the flatbreads to a plate and cover them with a clean kitchen towel to keep them warm while you cook the remaining flatbreads.
- Serve warm as an accompaniment to your favorite dips, spreads, or main dishes.

Tips:

- Make sure your baking powder is fresh to ensure the flatbreads rise properly and achieve the right texture.
