- Divide the milk (1% fat) into three portions of approximately 1/3 cup (100g) each.
- Divide the butter into three portions of approximately 3 tablespoons + 1 teaspoon (36.6g) each.

- In a small saucepan, combine one portion of butter (36.6g) and one portion of the milk (100g).
- Heat over low heat, stirring constantly until the butter is melted and the mixture is just warm.
- Add the finely chopped white chocolate and continue stirring gently until the chocolate is fully melted and smooth.
- Stir in one portion of the light sour cream (2 tablespoons / 24g) until well combined.
- Transfer to a fondue pot or heatproof serving bowl to keep warm.

- In a second small saucepan, repeat the process: combine one portion of butter (36.6g) and one portion of the milk (100g).
- Heat over low heat, stirring constantly until the butter is melted and the mixture is just warm.
- Add the finely chopped dark chocolate and continue stirring gently until the chocolate is fully melted and smooth.
- Stir in one portion of the light sour cream (2 tablespoons / 24g) until well combined.
- Transfer to a fondue pot or heatproof serving bowl to keep warm.
4. Warm the Milk Chocolate Fondue:
- In a third small saucepan, repeat the process: combine the final portion of butter (36.6g) and the last portion of the milk (100g).
- Heat over low heat, stirring constantly until the butter is melted and the mixture is just warm.
- Add the finely chopped milk chocolate and continue stirring gently until the chocolate is fully melted and smooth.
- Stir in the remaining portion of the light sour cream (2 tablespoons / 24g) until well combined.
