Turkish pide

Turkish pide is a traditional flatbread that originates from Turkey. It's often referred to as 'Turkish pizza' due to its oval shape and the wide variety of toppings that can be added to it. This recipe will guide you through the steps to make the dough, yielding a delicious and authentic Turkish pide that can be enjoyed on its own or with various toppings.

Ingredients:

1 tsp yeast
5g
1 tsp sugar
5g
1 cup water
250g
1 tsp salt
5g
2 tbsp greek yogurt
30g
1 egg
50g
1 tsp sesame seeds
5g

Instructions:

1. Activate the Yeast:
- In a small bowl, combine the yeast and sugar with 1/2 cup of warm water.
- Stir gently and let it sit for about 10 minutes, or until it becomes frothy and bubbly.
2. Make the Dough:
- In a large mixing bowl, combine the salt, Greek yogurt, and the yeast mixture.
- Gradually add the remaining water and mix until a dough starts to form.
- Knead the dough on a lightly floured surface for about 10 minutes, or until it becomes smooth and elastic.
- If the dough is too sticky, you can add a little more flour as needed.
3. First Rise:
- Place the dough in a lightly greased bowl, cover it with a clean kitchen towel or plastic wrap.
- Allow the dough to rise in a warm place for about 1-1.5 hours, or until it has doubled in size.
4. Shape the Dough:
- Preheat your oven to 220°C (430°F) and line a baking sheet with parchment paper.
- Punch down the risen dough to release any air bubbles and transfer it to a lightly floured surface.
- Divide the dough into two equal portions.
- Roll each portion into an oval or a boat-like shape, about 1/4 inch thick.
5. Prepare Toppings:
- In a small bowl, beat the egg.
- Brush the surface of each pide with the beaten egg to give it a nice golden color when baked.
6. Add Sesame Seeds:
- Sprinkle the sesame seeds evenly over the top of each pide for added flavor and a beautiful finish.
7. Bake:
- Place the pides on the prepared baking sheet.
- Bake in the preheated oven for about 15-20 minutes, or until they are golden brown and cooked through.
8. Serve:
- Remove the pides from the oven and let them cool on a wire rack for a few minutes.
- Serve warm, cut into slices, and enjoy your homemade Turkish Pide!

Tips:

- Use lukewarm water (around 110°F/45°C) to activate the yeast. This helps the dough rise properly.

- Let the dough rest in a warm, draft-free area. Cover it with a damp cloth to prevent it from drying out.

- Knead the dough well to develop gluten, which will give the pide a nice chewy texture.

- If you don't have Greek yogurt, you can substitute with regular plain yogurt, but Greek yogurt adds a richer flavor and texture.

- Brush the dough with a beaten egg before baking to give it a beautiful golden-brown color and a glossy finish.

- Sprinkle sesame seeds on top for added flavor and crunch.

- Preheat your oven to the highest temperature setting before baking to achieve a crispy crust.

Turkish pide is a versatile and delightful bread that can be enjoyed with various toppings or simply on its own. The combination of the chewy inside and crispy crust makes it a favorite for many. By following this recipe and the provided tips, you can create an authentic and delicious Turkish pide right in your own kitchen. Enjoy your homemade Turkish pide with family and friends!
