Ingredients:

Instructions:

1. Prepare the Ingredients:

- Trim the asparagus and green beans, then cut them into 2-inch pieces.
- Zest and juice the lemon.
2. Cook the Vegetables:
- Fill a large pot with water and bring it to a boil.
- Add the asparagus and green beans to the boiling water and cook for about 3 minutes or until they are bright green and tender-crisp.
- Drain the vegetables and immediately transfer them to a bowl of ice water to stop the cooking process. After a few minutes, drain the vegetables from the ice water and set aside.
3. Toast the Bread Crumbs:
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic to the skillet and sauté for about 1 minute, until fragrant.
- Add the bread crumbs to the skillet and stir to coat them in the oil and garlic.
- Continue to cook the bread crumbs, stirring frequently, for about 5 minutes or until they are golden brown and crispy. Remove from heat and set aside.
4. Make the Dressing:
- In a small bowl, whisk together the lemon juice, mustard, and lemon zest.
5. Assemble the Salad:
- In a large bowl, combine the cooked asparagus and green beans.
- Drizzle the lemon dressing over the vegetables and toss to coat evenly.
