Wholemeal sesame damper

Wholemeal sesame damper is a delicious and healthy twist on a traditional Australian quick bread. Perfect for serving with soups, stews, or as a snack with butter and jam, this recipe incorporates wholemeal flour and sesame seeds for added flavor and nutrition. Follow these simple steps to create a wholesome and satisfying bread that your family will love.

Ingredients:

1/2 cup sesame seeds
72g
2 cups self-raising flour
300g
1 tsp salt
5g
1 tbsp milk (1% fat)
16g
1/2 cup greek yogurt
120g

Instructions:

1. Preheat Your Oven: Start by preheating your oven to 220°C (428°F). Ensure the oven rack is in the middle position.
2. Prepare Baking Tray: Line a baking tray with baking paper or lightly grease it.
3. Toast Sesame Seeds: In a dry skillet over medium heat, toast the sesame seeds until they are golden brown and fragrant. Stir frequently to avoid burning. Once done, set them aside to cool.
4. Mix Dry Ingredients: In a large mixing bowl, combine the self-raising flour, salt, and half of the toasted sesame seeds. Stir well to ensure the salt and seeds are evenly distributed throughout the flour.
5. Incorporate Wet Ingredients: Create a well in the center of the dry ingredients. Add the Greek yogurt and milk into the well. Using a spatula or your hands, gently mix the wet ingredients into the dry mixture until a dough forms. Do not overmix; the dough should be slightly sticky.
6. Shape the Dough: Turn the dough out onto a lightly floured surface. Knead it gently a few times to bring it together. Shape it into a round loaf about 15-20 cm (6-8 inches) in diameter.
7. Prepare for Baking: Place the shaped dough onto the prepared baking tray. Cut a cross about 1 cm (0.4 inches) deep into the top of the loaf using a sharp knife. Sprinkle the remaining toasted sesame seeds on top, lightly pressing them into the dough so they adhere.
8. Bake: Place the baking tray in the preheated oven. Bake for about 25-30 minutes or until the damper is golden brown and sounds hollow when tapped on the bottom.
9. Cool: Once baked, remove the damper from the oven and transfer it to a wire rack to cool slightly.
10. Serve: Serve warm or at room temperature. The damper is delicious on its own or with a spread of butter, jam, or any of your favorite toppings.

Tips:

- Ensure your self-raising flour is fresh for optimal rising.

- You can toast the sesame seeds for a few minutes to enhance their flavor before adding them to the dough.

- Use a non-stick baking sheet or line with parchment paper to prevent sticking.

- For a softer damper, you can knead the dough lightly for a couple of minutes before shaping.

- If you prefer a more savory flavor, consider adding herbs like rosemary or thyme to the dough.

Wholemeal sesame damper is a versatile and easy-to-make bread that can complement a variety of meals or be enjoyed on its own. With a perfect balance of wholesome ingredients and delightful texture, it’s a recipe worth adding to your baking repertoire. Enjoy this warm and toasty bread fresh out of the oven with your favorite spread or dipping sauce.
