- In a large, oven-safe skillet (preferably cast-iron), cook the chopped bacon over medium heat until it is crisp. This should take about 5-7 minutes. Once crispy, remove the bacon pieces and set them aside, leaving the bacon grease in the skillet.
3. Cook Shallots:
- Add 1 tablespoon of butter to the bacon grease in the skillet. Once melted, add the halved or quartered shallots. Cook them over medium heat, stirring occasionally, until they are softened and starting to caramelize. This will take about 10-15 minutes.
4. Add Thyme and Bacon:
- Sprinkle the cooked shallots with the chopped fresh thyme and stir to combine.
- Reintroduce the cooked bacon pieces to the skillet, mixing them evenly with the shallots and thyme.
5. Prepare Puff Pastry:
- Roll out the two sheets of puff pastry on a lightly floured surface to ensure they are slightly larger than your skillet.
