Ingredients:

1 cup milk (1% fat)

Instructions:

1. Preheat and Prepare:
- Preheat your oven to 325°F (160°C).
- Prepare a baking dish or roasting pan large enough to hold six 6-ounce ramekins. Set aside.
2. Heat the Dairy:
- In a medium saucepan, combine the milk and light sour cream.
- Heat the mixture over medium heat, stirring occasionally, until it just starts to simmer. Do not let it boil.

3. Melt the Chocolate:
- Add the chopped dark chocolate to the hot milk and sour cream mixture.
- Stir continuously until the chocolate is completely melted and the mixture is smooth and uniform.
- Remove the saucepan from the heat.
4. Mix the Egg Yolks and Sugar:
- In a mixing bowl, whisk together the egg yolks and brown sugar until the mixture becomes pale and slightly thickened.
5. Combine and Temper:
- Slowly pour a small amount of the hot chocolate mixture into the egg yolk mixture while whisking constantly to temper the yolks. This prevents them from curdling.
- Gradually add the rest of the chocolate mixture to the egg yolk mixture, whisking continuously to combine.

6. Add Vanilla Extract:
- Stir in the vanilla extract until fully incorporated.
7. Strain the Custard:
- For an extra smooth texture, strain the custard mixture through a fine-mesh sieve into a large measuring cup or another bowl.
8. Fill the Ramekins:
- Evenly divide the custard mixture among the six ramekins.
9. Prepare the Water Bath:
- Place the filled ramekins in the prepared baking dish.
- Pour hot water into the baking dish, being careful not to splash water into the ramekins, until the water reaches about halfway up the sides of the ramekins.
10. Bake:
- Carefully transfer the baking dish to the preheated oven.
- Bake for 30-35 minutes, or until the centers of the custards are just set and still slightly jiggly.
11. Cool and Chill:
- Remove the ramekins from the water bath and set them on a wire rack to cool to room temperature.
- Once cooled, cover the ramekins with plastic wrap and refrigerate for at least 2 hours, or until thoroughly chilled.
12. Serve:
- Serve the baked chocolate custards chilled. Optionally, you can garnish with a dollop of whipped cream, chocolate shavings, or a dusting of cocoa powder or powdered sugar before serving.
