3. Sauté the Vegetables:
- Add the chopped celery, diced onion, sliced carrot, and sliced mushrooms to the same pot.
- Cook the vegetables until they begin to soften, about 5 minutes. Stir occasionally to prevent sticking or burning.
4. Add the Tomato Puree:
- Stir in the tomato puree and cook for about 2 more minutes, allowing the flavors to meld together.
5. Combine Ingredients:
- Return the seared beef to the pot.
- Pour in the Guinness beer, stirring to deglaze the pot, scraping up any browned bits from the bottom.
6. Simmer the Stew:
- Add the beef broth and bay leaves to the pot. Stir to combine all the ingredients.
- Bring the stew to a boil, then reduce the heat to a simmer.
- Cover the pot and let it simmer for about 1.5 to 2 hours, or until the beef is tender and the flavors have melded together.
