Instructions:

1. Prepare the Filling:
- Heat the olive oil in a large frying pan over medium heat.
- Add the finely chopped onion and sauté for about 3 minutes until softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the ground beef to the pan and cook, breaking up the meat with a spoon, until browned all over and cooked through, about 5-7 minutes.
2. Add Flavors and Vegetables:
- Stir in the curry paste and cook for 2 minutes, ensuring the beef is well coated.
- Add the finely diced carrot and peas, and continue to cook for another 3-4 minutes until the vegetables are tender.
- Stir in the chopped coriander leaves and lemon juice, mixing well to combine.
- Remove the pan from heat and let the mixture cool slightly.
3. Prep the Puff Pastry:
- Preheat your oven to 400°F (200°C).
- On a lightly floured surface, roll out the puff pastry sheets if needed to smooth out any folds or creases.
- Cut each puff pastry sheet into equal squares (about 4-6 squares per sheet, depending on desired size).
4. Assemble the Puffs:
- Place a spoonful of the beef filling onto the center of each puff pastry square.
- Fold the pastry over the filling to form a triangle or rectangle, depending on the cut and shape of your squares.
- Press the edges together with a fork to seal the puffs and avoid spillage during baking.
5. Egg Wash:
