Instructions:

1. Toast the Almonds:

b. Add the almonds, stirring frequently, and toast for about 3-5 minutes until they become golden brown and fragrant.
c. Remove from heat and set aside.
2. Prepare the Broccolini:
a. Bring a large pot of salted water to a boil.
b. Add the broccolini and cook for about 3-4 minutes until tender-crisp.
c. Drain and immediately plunge into a bowl of ice water to stop the cooking process. Drain again and set aside.
3. Make the Cheese Sauce:
a. In a medium saucepan, melt the butter over medium heat.
b. Stir in the flour to make a roux and cook for about 1-2 minutes, whisking constantly until it is lightly golden.
c. Slowly add the milk, whisking continuously to avoid lumps.
d. Cook until the sauce thickens, about 2-3 minutes.
e. Stir in the cheddar cheese, parmesan cheese, and cream cheese.
f. Continue to stir until all the cheese is melted and the sauce is smooth.
g. Season with salt and pepper to taste.
4. Combine and Serve:
a. In a large serving bowl, combine the cooked broccolini with the cheese sauce, gently tossing to coat evenly.
b. Sprinkle the toasted almonds over the top.
