- In a medium saucepan, melt the butter over medium heat.
- Once the butter is melted, add the flour. Stir continuously to form a roux, cooking for about 1-2 minutes until it has a light, golden color.
- Gradually add the milk to the roux, whisking constantly to avoid lumps. Continue to cook, whisking frequently, until the sauce thickens and bubbles, about 5-7 minutes.
- Remove the saucepan from the heat and stir in the shredded cheddar cheese until melted and smooth. Set aside.
4. Assemble the Dish:
- Arrange half of the sliced potatoes in a greased baking dish in an even layer.
- Pour half of the cheese sauce over the potatoes, spreading it evenly to cover all the slices.
- Layer the remaining potato slices over the cheese sauce.
- Pour the rest of the cheese sauce over the top layer of potatoes, ensuring even coverage.
5. Bake:
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 45 minutes.
- After 45 minutes, remove the foil and bake for an additional 20-25 minutes, or until the potatoes are tender, and the top is golden and bubbly.
