Instructions:
1. Prepare the Ingredients:
- Peel and devein the shrimps if not already prepared.
- Slice the Vienna sausages into bite-sized pieces.
- Wash and slice the zucchini into half moons.
- Wash, core, and slice the red peppers into strips.
2. Season the Shrimp:
- In a medium bowl, toss the shrimps with a dash of salt and black pepper. Set aside.
3. Heat the Oil:
- Heat 3 tablespoons of olive oil in a large skillet or wok over medium-high heat until shimmering.
4. Cook the Sausages:
- Add the sliced Vienna sausages to the skillet. Cook, stirring occasionally, until they start to brown, about 3-4 minutes. Remove them from the skillet and set aside.
5. Cook the Vegetables:
- In the same skillet, add the sliced zucchini and red peppers. Stir-fry for about 5-7 minutes, until they start to soften but are still crisp and vibrant. You may need to add a bit more olive oil if the skillet looks dry.
6. Add the Shrimp:
- Push the vegetables to the side of the skillet and add the seasoned shrimp to the center. Cook for about 2-3 minutes on each side, until the shrimp turn pink and are cooked through.
7. Combine Everything:
- Return the browned Vienna sausages to the skillet. Stir everything together and let it cook for another 1-2 minutes to allow the flavors to meld.
8. Taste and Adjust Seasoning:
- Taste the stir fry and adjust the seasoning with additional salt and pepper if necessary.
9. Serve:
- Serve the Cajun stir fry hot, either on its own or with a side of rice, quinoa, or your preferred grain.
Tips:
- Ensure that the shrimp are fully thawed and pat them dry before cooking for a better sear.
- Cut the vegetables to a consistent size for even cooking.
- Adjust the seasoning to your preference. If you like it spicier, add some Cajun seasoning or a pinch of cayenne pepper.
- Use a high smoke point oil like olive oil to maintain the stir fry's texture without burning the ingredients.
- Cook sausage and shrimps separately if you prefer each protein to be cooked to their optimum doneness.
Your Cajun Stir Fry is now ready to serve! This dish offers a tantalizing mix of flavors and textures, making it a great option for a hearty and satisfying meal. Enjoy this dish on its own or with a side of rice for a more filling experience.
