Cajun Stir Fry is a delightful blend of vibrant vegetables and succulent proteins, all spiced up with a touch of Cajun flair. This quick and easy recipe is perfect for a weeknight dinner, combining the savory taste of shrimp and vienna sausage with the fresh crunch of zucchini and red peppers.

Ingredients:

16 oz shrimps
450g
10 oz vienna sausage
280g
2 zucchini
390g
2 red peppers
240g
1 dash salt
0.40g
1 dash black pepper
1/10g
3 tbsp olive oil

Instructions:

1. Prepare the Ingredients:
- Peel and devein the shrimps if not already prepared.
- Slice the Vienna sausages into bite-sized pieces.
- Wash and slice the zucchini into half moons.
- Wash, core, and slice the red peppers into strips.
2. Season the Shrimp:
- In a medium bowl, toss the shrimps with a dash of salt and black pepper. Set aside.
3. Heat the Oil:
- Heat 3 tablespoons of olive oil in a large skillet or wok over medium-high heat until shimmering.
4. Cook the Sausages:
- Add the sliced Vienna sausages to the skillet. Cook, stirring occasionally, until they start to brown, about 3-4 minutes. Remove them from the skillet and set aside.
5. Cook the Vegetables:
- In the same skillet, add the sliced zucchini and red peppers. Stir-fry for about 5-7 minutes, until they start to soften but are still crisp and vibrant. You may need to add a bit more olive oil if the skillet looks dry.
6. Add the Shrimp:
- Push the vegetables to the side of the skillet and add the seasoned shrimp to the center. Cook for about 2-3 minutes on each side, until the shrimp turn pink and are cooked through.
7. Combine Everything:
- Return the browned Vienna sausages to the skillet. Stir everything together and let it cook for another 1-2 minutes to allow the flavors to meld.
8. Taste and Adjust Seasoning:
- Taste the stir fry and adjust the seasoning with additional salt and pepper if necessary.
9. Serve:
- Serve the Cajun stir fry hot, either on its own or with a side of rice, quinoa, or your preferred grain.
