Carrot, garlic and olive focaccia

This delicious Carrot, Garlic, and Olive Focaccia is an exciting twist on the classic Italian bread. Ingredients:

4 cups all-purpose white wheat flour

Instructions:

1. Prepare the Dough:
1. In a large bowl, combine the flour, yeast, and salt.
2. Gradually add the water and 1/3 cup (80g) of olive oil. Mix until a dough forms.
3. Knead the dough on a floured surface for about 10 minutes, or until smooth and elastic.
4. Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise in a warm place for about 1 hour, or until it has doubled in size.
2. Prepare the Toppings:
1. While the dough is rising, grate the carrots and mince the garlic cloves.
2. In a medium bowl, combine the grated carrots, minced garlic, chopped thyme, and olives. Set aside.
3. Assemble the Focaccia:
1. Preheat your oven to 425°F (220°C).
2. Once the dough has risen, punch it down to release the air.
3. Transfer the dough to a greased baking sheet, stretching and pressing it with your fingers to form a rectangle approximately 12x9 inches (30x22 cm).
4. Make shallow indentations all over the dough with your fingertips.
5. Drizzle the remaining 1/3 cup (80g) of olive oil evenly over the surface.
6. Spread the carrot, garlic, thyme, and olive mixture evenly over the dough, gently pressing it into the indentations.
4. Bake the Focaccia:
1. Place the focaccia in the preheated oven and bake for 20-25 minutes or until golden brown and cooked through.
2. Once baked, remove from the oven and let it cool on a wire rack.
5. Serve:
1. Slice the focaccia into squares or rectangles and serve warm or at room temperature.
