Instructions:

1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Cauliflower:
- Bring a large pot of salted water to a boil.
- Add the cauliflower florets and cook for about 5 minutes, or until just tender but still a bit firm.
- Drain the cauliflower and transfer it to a large, ovenproof dish.
3. Cook the Bacon:
- In a medium pan, cook the chopped bacon over medium heat until it turns crispy.
- Remove from the pan and set aside, leaving the bacon fat in the pan.
4. Prepare the Sauce:
- In the same pan, add the butter to the bacon fat and melt over medium heat.
- Stir in the flour to form a roux and cook for about 2 minutes, until golden.
- Gradually whisk in the milk, ensuring there are no lumps.
- Continue cooking and stirring until the sauce thickens, about 5-7 minutes.
- Stir in the mustard, half of the shredded cheddar cheese, and the cooked bacon. Cook until the cheese is melted and the sauce is smooth.
5. Assemble the Gratin:
- Pour the sauce evenly over the cauliflower.
- Sprinkle the remaining cheddar cheese on top.
- In a small bowl, mix the bread crumbs with a tablespoon of melted butter (optional) to help them brown better.
- Sprinkle the bread crumbs evenly over the cheese-topped cauliflower.
6. Bake:
- Place the dish in the preheated oven and bake for about 25-30 minutes, or until the top is golden and bubbly.
