Ingredients:

1/2 cauliflower
450g
16 oz broccoli
450g
2 potatoes
400g
1 onion
110g
1/2 cup cheddar cheese
80g
1/4 cup milk (1% fat)
60g
1/3 cup light sour cream
72g
2 garlic cloves
6g

Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Vegetables:
- Cut the cauliflower and broccoli into small florets.
- Peel and thinly slice the potatoes.
- Finely chop the onion.
- Mince the garlic cloves.
3. Blanch Vegetables:
Bring a large pot of salted water to a boil. Add the cauliflower and broccoli florets and blanch for 2-3 minutes until they are just tender. Drain and set aside.
4. Cook the Potatoes:
In the same boiling water, add the sliced potatoes and cook for about 5-7 minutes until they are tender but not mushy. Drain and set aside.
5. Sauté Onion and Garlic:
In a large skillet over medium heat, sauté the chopped onion in a bit of olive oil or cooking spray until soft and translucent about 4-5 minutes. Add the minced garlic and cook for an additional minute.
6. Prepare the Cream Mixture:
In a medium mixing bowl, combine the milk, light sour cream, and half of the shredded cheddar cheese (40g). Stir until well mixed.
7. Assemble the Gratin:
- In a greased baking dish, spread the sliced potatoes evenly across the bottom.
- Add an even layer of the blanched cauliflower and broccoli florets.
- Pour the sautéed onion and garlic over the vegetables.
8. Add the Cream Mixture:
Pour the cream mixture evenly over the vegetables in the baking dish. Use a spatula to spread it if necessary.
9. Top with Cheese:
Sprinkle the remaining cheddar cheese (40g) evenly over the top of the dish.
10. Bake:
Place the baking dish in the preheated oven and bake for 25-30 minutes or until the top is golden and bubbly.
11. Serve:
Allow the gratin to cool for a few minutes before serving. Serve warm as a side dish or a main course.

Tips:

- Cut the vegetables into similar-sized pieces to ensure even cooking.

- Try steaming the cauliflower and broccoli for a few minutes before baking to retain their vibrant color and slightly reduce cooking time.

- Grate the cheddar cheese just before using it for the freshest flavor and best melting results.

- Mix the milk, sour cream, and garlic thoroughly to create a smooth sauce that evenly coats the vegetables.

- Season with salt and pepper to taste before baking to enhance the dish's flavor.

- For an extra crispy topping, sprinkle some breadcrumbs mixed with a bit of olive oil or melted butter over the gratin before baking.

With its creamy texture and savory flavors, cauliflower broccoli gratin is sure to become a favorite. This easy-to-make dish is both nutritious and satisfying, providing a delicious way to enjoy your vegetables. Whether you're serving it as a side or a main dish, this gratin is a comforting and flavorful choice for any occasion.
