Instructions:

1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Prepare the Garlic: Peel the garlic cloves and finely mince them.
3. Mix the Wet Ingredients: In a small saucepan, combine the butter, maple syrup, and brown sugar. Heat gently over low heat, stirring occasionally, until the butter has melted and the sugar has dissolved completely. Remove from heat and set aside to cool slightly.
4. Combine the Dry Ingredients: In a large mixing bowl, sift together the all-purpose flour, self-raising flour, ginger, cinnamon, and ground nutmeg.
5. Combine the Wet and Dry Ingredients: Pour the slightly cooled butter mixture into the bowl with the dry ingredients. Add the minced garlic and egg yolk. Mix everything together until a smooth dough forms.
6. Chill the Dough: Wrap the dough in plastic wrap and refrigerate for about 30 minutes, or until it is firm enough to roll out.
7. Roll Out the Dough: On a lightly floured surface, roll out the dough to about 1/4 inch (0.6 cm) thickness. Use star-shaped cookie cutters to cut out the stars.
