Instructions:

- Cut the fish into small, bite-sized cubes (about 1/2 inch pieces) and place them in a large mixing bowl.
2. Marinate the Fish:
- Squeeze the juice of 4-5 limes (enough to fully cover the fish) over the cubed fish.
- Stir gently to ensure all the fish is coated with lime juice. The acidic lime juice will “cook” the fish.
- Cover the bowl with plastic wrap and refrigerate for about 20-30 minutes, or until the fish turns opaque and firms up.
3. Prepare the Vegetables and Avocado:
- While the fish is marinating, finely chop the red hot chili peppers (remove seeds for a milder heat, if desired).
- Dice the onion finely.
- Cut the tomatoes into small cubes.
- Dice the avocado into cubes, similar in size to the fish pieces, but set it aside to add just before serving to maintain its texture.
4. Combine Ingredients:
- Once the fish is marinated, drain off any excess lime juice, but leave enough to keep the fish moist.
- Add the chopped chili peppers, diced onion, and cubed tomatoes to the bowl with the fish. Gently stir to combine.
- Season with salt and freshly ground black pepper to taste.
5. Add the Avocado:
- Just before serving, gently fold in the diced avocado cubes.
6. Garnish and Serve:
- If desired, sprinkle freshly chopped cilantro over the ceviche as a garnish.
- Serve the ceviche immediately with tortilla chips, tostadas, or simply by itself as a refreshing appetizer.
