Instructions:

- Mince the garlic cloves and measure out the peas, vegetable broth, and sour cream.
2. Sauté the Aromatics:
- In a large pot or Dutch oven, heat the 2 teaspoons of olive oil over medium heat.
- Add the diced onion and minced garlic to the pot. Sauté until the onion becomes translucent and fragrant, about 5 minutes.
3. Cook the Potatoes:
- Add the diced potatoes to the pot and stir to combine with the onion and garlic.
- Pour in the 4 cups of vegetable broth. Increase the heat to high and bring the mixture to a boil.
- Once boiling, reduce the heat to a simmer and cover the pot. Cook until the potatoes are tender, about 20 minutes.
4. Add Peas and Blend:
- Add the ½ cup of peas to the pot. Continue to cook for an additional 5 minutes.
- Using an immersion blender, blend the soup until smooth. If you don't have an immersion blender, allow the soup to cool slightly and blend in batches using a regular blender.
5. Incorporate the Sour Cream:
- Stir in the 2 tablespoons of light sour cream until fully integrated and the soup is creamy.
6. Season and Serve:
- Taste the soup and adjust the seasoning with salt and pepper as needed.
- Ladle the soup into bowls and serve hot. Optionally, garnish with a dollop of sour cream or fresh herbs like parsley or chives.
