Instructions:

1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).

- In a medium skillet over medium heat, cook the 3 strips of bacon until crispy.
- Once cooked, remove the bacon and place it on a paper towel-lined plate to drain excess fat.

- Finely chop 2 stalks of onion and 1 shallot.

5. Prepare the Wet Ingredients:
- In a separate bowl, whisk together 1 egg, 1/2 cup milk (1% fat), and 1 tsp mustard until well combined.
6. Combine Wet and Dry Ingredients:
- Pour the wet ingredient mixture into the dry ingredient mixture.
- Stir until all ingredients are just combined. Be careful not to overmix the batter.
7. Portion the Batter:
- Use a spoon or cookie scoop to portion the batter onto the prepared baking sheet. Each puff should be about 2 tablespoons of batter, spaced about 2 inches apart.
8. Bake the Puffs:
