Instructions:

1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
2. Cook the Bacon:
- In a medium skillet over medium heat, cook the 3 strips of bacon until crispy.
- Once cooked, remove the bacon and place it on a paper towel-lined plate to drain excess fat.
- Once cooled, crumble the bacon into small pieces.
3. Prepare the Vegetables:
- Finely chop 2 stalks of onion and 1 shallot.
- In the same skillet with a little leftover bacon grease, sauté the chopped onion and shallot until they are soft and translucent, about 3-5 minutes.
- Remove from heat and set aside.
4. Mix the Dry Ingredients:
- In a large mixing bowl, combine 1 cup of all-purpose white wheat flour, 1 dash of salt, and 1 dash of black pepper.
- Stir in 2 cups of grated parmesan cheese, the crumbled bacon, sautéed onions and shallots, and 2 cups of sweet corn.
5. Prepare the Wet Ingredients:
- In a separate bowl, whisk together 1 egg, 1/2 cup milk (1% fat), and 1 tsp mustard until well combined.
6. Combine Wet and Dry Ingredients:
- Pour the wet ingredient mixture into the dry ingredient mixture.
- Stir until all ingredients are just combined. Be careful not to overmix the batter.
7. Portion the Batter:
- Use a spoon or cookie scoop to portion the batter onto the prepared baking sheet. Each puff should be about 2 tablespoons of batter, spaced about 2 inches apart.
8. Bake the Puffs:
- Place the baking sheet in the preheated oven.
- Bake for 20-25 minutes, or until the puffs are golden brown and cooked through.
9. Cool and Serve:
- Allow the puffs to cool on a wire rack for a few minutes.
