Ingredients:

2 cups bread crumbs
180g
1/2 cup milk (1% fat)
120g
1 tbsp olive oil
14g
1 onion
160g
2 garlic cloves
6g
1 tbsp rosemary
16g
1 tsp spice mix
5g
2 lb ground beef (80/20%)
910g
1 egg
50g
1/3 cup pasta sauce
72g
1 cup mozzarella cheese
120g

Instructions:

1. Prepare the Breadcrumb Mixture:
In a large mixing bowl, combine the 2 cups of bread crumbs and 1/2 cup of milk. Stir to ensure the breadcrumbs absorb the milk. Let it sit for about 5 minutes.
2. Preheat Oven and Prepare Pan:
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
3. Sauté Onion and Garlic:
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the finely chopped onion and cook until it's soft and translucent, about 5 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant. Remove from heat and let it cool slightly.
4. Combine Meatloaf Ingredients:
In the bowl with the soaked breadcrumbs, add the ground beef, sautéed onion and garlic, chopped rosemary, and spice mix. Mix well to combine the ingredients evenly.
5. Add Wet Ingredients:
Add the beaten egg to the meat mixture and mix until fully incorporated.
6. Shape the Meatloaf:
Transfer the meat mixture to the prepared baking dish and shape it into a loaf, approximately 9x5 inches (23x13 cm).
7. Add Pasta Sauce:
Spread the 1/3 cup of pasta sauce evenly over the top of the meatloaf.
8. Bake:
Place the baking dish in the preheated oven and bake for about 45-50 minutes, or until the meatloaf is nearly cooked through.
9. Add Mozzarella:
Remove the meatloaf from the oven and sprinkle the shredded mozzarella cheese evenly on top. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
10. Rest and Serve:
Once done, remove the meatloaf from the oven and let it rest for about 10 minutes. This helps the juices to redistribute, making the meatloaf easier to slice.
11. Slice and Enjoy:
Slice the meatloaf into desired pieces and serve warm, optionally garnished with extra rosemary or your favorite herbs.

Tips:

- Make sure to mix the ingredients thoroughly to ensure an even distribution of flavors and cheese throughout the meatloaf.

- For a juicier meatloaf, allow it to rest for a few minutes after taking it out of the oven before slicing.

- You can add a layer of extra pasta sauce on top of the meatloaf before baking for an added burst of flavor.

- Using freshly grated mozzarella cheese will provide a creamier texture compared to pre-shredded cheese.

- To enhance the flavor even more, consider adding a small amount of grated Parmesan cheese to the meat mixture.

- For best results, use a meat thermometer to ensure the meatloaf is cooked to an internal temperature of 160°F (71°C).

With its savory blend of herbs, spices, and gooey cheese, this Cheesy Italian Meatloaf is sure to become a family favorite. It's a satisfying and flavorful dish that marries the comfort of familiar meatloaf with the delightful taste of Italian ingredients. Enjoy this wonderful meal with a side of your favorite pasta or a fresh green salad.
