Ingredients:

2 lb ground beef (80/20%)
910g
2 eggs
110g
3 onions
44g
1 onion
150g
3 garlic cloves
9g
1.50 cups spinach
44g
4 oz goat cheese
110g
2 tsp canned tomato paste
11g
1/2 tsp red pepper (spice)
0.90g
1/2 tsp dried oregano
1/2g
1 tsp salt
6g
1/2 tsp black pepper
1.05g
1 tbsp rosemary
1.70g

Instructions:

1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Meatloaf Mixture:
- In a large mixing bowl, combine the ground beef, eggs, finely chopped onions, tomato paste, red pepper flakes, dried oregano, salt, and black pepper. Mix thoroughly until all ingredients are well incorporated.
3. Sauté the Vegetables:
- Heat a small amount of oil in a skillet over medium heat. Add the diced medium onion and minced garlic. Sauté for about 3-4 minutes, until the onion is translucent and the garlic is fragrant.
- Add the chopped spinach to the skillet and cook for another 2-3 minutes, just until the spinach is wilted. Remove from heat and let it cool slightly.
4. Prepare the Filling:
- In a separate bowl, combine the sautéed spinach mixture with the crumbled goat cheese and chopped rosemary. Mix well.
5. Assemble the Meatloaf:
- On a piece of parchment paper or wax paper, spread the meatloaf mixture into a large, flat rectangle, about 1/2 inch thick.
- Evenly distribute the spinach and goat cheese filling over the meatloaf mixture, leaving a small border around the edges.
6. Roll the Meatloaf:
- Carefully roll the meatloaf mixture, starting from one of the shorter ends, into a tight log, encasing the filling inside.
- Transfer the rolled meatloaf to a greased baking dish, seam-side down.
7. Bake:
- Place the baking dish in the preheated oven and bake for 45-55 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
8. Rest and Serve:
- Remove the meatloaf from the oven and let it rest for about 10 minutes before slicing. Resting will help retain the juices inside the meatloaf.
- Slice the meatloaf into thick slices and serve warm.

Tips:

- Make sure the spinach is thoroughly drained to avoid excess moisture in the meatloaf.

- You can sauté the onions and garlic before mixing them with the meat for added depth of flavor.

- Let the meatloaf rest for at least 10 minutes after baking to make it easier to slice.

- Feel free to add your favorite herbs and spices to customize the flavor to your liking.

- If you prefer, you can substitute ground turkey or chicken for a lighter version of this recipe.

Enjoy a nutritious and flavorful dish with this Keto Stuffed Meatloaf. It’s an excellent main course that not only aligns with your keto lifestyle but also pleases the palate with its rich textures and tastes.
