Instructions:

2. Cook the Crepes: Heat a non-stick skillet over medium heat and coat it lightly with cooking spray. Pour approximately 1/4 cup of the batter into the skillet and tilt the pan to spread the batter evenly into a thin layer. Cook for about 2 minutes or until the edges begin to lift and the bottom is lightly browned. Flip the crepe and cook for another 1-2 minutes on the other side. Remove the crepe and place on a plate. Repeat until all the batter is used up, ensuring the skillet is lightly greased between each crepe.
2. Cook the Chicken: Heat a large frying pan over medium heat and lightly coat with cooking spray. Add the chicken breasts and cook until no longer pink in the middle, about 5-7 minutes. Remove the chicken from the pan and set aside.
3. Sauté the Vegetables: In the same frying pan, add the sliced mushrooms, chopped scallions, and minced garlic. Sauté until the mushrooms are tender and the garlic is fragrant, about 3-4 minutes.
4. Combine Ingredients: Return the chicken to the pan. Stir in the heavy whipping cream and chicken gravy. Allow the mixture to simmer until it thickens slightly, about 5 minutes. Season with salt and pepper to taste.
