Instructions:

1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Potatoes:
- Peel and cut the potatoes into small chunks.
- Place them in a large pot, cover with water, and bring to a boil.
- Cook until the potatoes are tender, about 15 minutes.
- Drain and return the potatoes to the pot.
- Add 2 tbsp of butter and mash until smooth. Mix in 1/2 cup light sour cream and 1 tbsp mustard, and season with salt and pepper to taste. Set aside.

- Sprinkle 1 tbsp flour over the vegetables and stir well to combine.
- Pour in 1/2 cup white wine, stirring constantly until the liquid has reduced by half and thickened slightly.
- Stir in 1 cup chicken gravy. Return the chicken to the skillet and let the mixture simmer for 5 minutes, until thick and bubbly.
4. Assemble the Pies:
- Spoon the chicken and mushroom mixture evenly into individual pie dishes or a large baking dish.
- Top with the mashed potatoes, spreading them to cover the filling completely. Use a fork to create a pattern on top if desired.
5. Bake the Pies:
- Place the assembled pies in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and the filling is bubbling.
