Instructions:

1. Heat the Pan:

- Place the seasoned chicken thighs into the skillet, skin side down. Cook for about 5-7 minutes, or until the skin is golden brown and crispy.
- Flip the chicken and cook the other side for an additional 5 minutes. Remove and set aside on a plate.
3. Sauté the Onion:
- In the same skillet, add 2 tablespoons of butter and allow it to melt.
- Add the finely chopped onion and sauté for about 3-4 minutes, or until it becomes translucent and tender.
4. Prepare the Sauce:
- Pour in 1 cup of chicken gravy and stir to combine with the onions.
- Add 1/2 cup of peanut butter to the mixture. Stir continuously until the peanut butter melts and the mixture becomes smooth.
5. Add the Chicken and Lime Juice:
- Return the browned chicken thighs to the skillet, spooning some of the peanut butter sauce over them.
- Pour in 1.5 fl oz of lime juice and gently stir to combine it into the sauce.
6. Cook the Chicken:
- Lower the heat to a simmer. Cover the skillet and cook the chicken for an additional 20-25 minutes, or until the chicken is thoroughly cooked and the internal temperature reaches 165°F (75°C). Stir occasionally to prevent the sauce from sticking to the bottom of the pan.
7. Finish and Garnish:
- Once the chicken is fully cooked, sprinkle 1 teaspoon of chopped coriander leaves over the top.
