Ingredients:

Instructions:

1. Preparation:

- Open the cans of tomatoes and have them ready.
2. Cook the Chicken:
- Heat the olive oil in a large pot or deep skillet over medium-high heat.
- Once the oil is hot, add the chicken thighs to the pot.
- Cook the chicken thighs for about 5-7 minutes on each side, or until they are browned.
- Remove the chicken thighs from the pot and set them aside on a plate.
3. Prepare the Base:
- In the same pot, add the canned tomatoes and 1/2 cup of water.
- Stir to combine the tomatoes and water, scraping up any bits from the bottom of the pot to add flavor.
4. Add the Chicken:
- Return the browned chicken thighs to the pot, nestling them in the tomato mixture.
- Bring the mixture to a simmer over medium heat.
5. Cook the Rice:
- Add the 2 cups of white rice to the pot, spreading it around evenly.
- Add another 1.5 cups of water if needed to ensure there’s enough liquid to cook the rice. The liquid should cover the rice and chicken.
- Stir gently to combine, making sure the rice is submerged in the liquid.
6. Simmer Everything Together:
- Cover the pot with a lid and reduce the heat to low.
- Let the mixture simmer gently for about 20-25 minutes, or until the rice is cooked and has absorbed the liquid, and the chicken is fully cooked through.
- If the liquid is absorbed too quickly and the rice is not yet done, you can add a bit more water as needed, a little at a time.
7. Add the Peas:
- Once the rice and chicken are cooked, stir in the 1 cup of peas.
- Cover the pot again and let it cook for another 5 minutes, just until the peas are heated through.
8. Final Touch:
- Check the seasoning and add salt and pepper if needed.
- Remove from heat and let stand, covered, for a few minutes before serving.
9. Serve:
