Instructions:

1. Prep the Ingredients:
- Dice the red onion.
- Slice the carrots.
- Chop the celery.
- Slice the mushrooms.
- Thinly slice the potatoes.
2. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
3. Brown the Beef:
- In a large oven-safe pot or Dutch oven, heat 2 tbsp of olive oil over medium-high heat.
- Add the beef chunks and sear them on all sides until they are browned. This takes about 5-7 minutes. Remove the beef and set it aside.
4. Sauté the Vegetables:
- In the same pot, add the diced red onion, sliced carrots, chopped celery, and sliced mushrooms.
- Sauté for about 5 minutes until the vegetables start to soften.
5. Combine Ingredients:
- Return the browned beef to the pot.
- Add the fresh thyme, bay leaves, red wine, pasta sauce, and beef broth.
- Stir well to combine all the ingredients.
6. Simmer the Stew:
- Bring the mixture to a boil, then reduce the heat to low.
