Instructions:

1. Prepare Ingredients:
- Rinse and pat dry the salmon. Cut it into bite-sized pieces.
- Peel and dice the potatoes into small cubes for quicker cooking.
- Dice the red pepper.
- Beat the eggs in a bowl and set aside.
2. Cook the Potatoes:
- Heat 1 tablespoon of olive oil in a large nonstick skillet over medium heat.
- Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally, until they are soft and beginning to brown.
3. Prepare the Salmon:
- While the potatoes are cooking, season the salmon pieces with black pepper.
- In a separate smaller pan, heat the remaining 1 tablespoon of olive oil over medium heat.
- Add the salmon pieces and cook for about 3-4 minutes on each side or until fully cooked and flaky. Remove from heat and set aside.
4. Combine and Cook:
- Once the potatoes are cooked, add the diced red pepper to the skillet with the potatoes and cook for an additional 2-3 minutes until the red pepper begins to soften.
- Pour the beaten eggs over the potato and pepper mixture in the skillet. Stir gently to scramble the eggs, cooking until they are just set.
- Add the cooked salmon pieces to the skillet. Sprinkle the salt over the mixture and pour in 1/3 cup of water. Continue cooking for another 2-3 minutes, stirring gently to combine all the ingredients and allow the flavors to meld.
5. Serve:
- Once everything is well combined and the eggs are fully cooked, remove the skillet from heat.
