Crumpets

Crumpets are a delightful British treat, characterized by their soft, spongy texture and signature holes that soak up butter and toppings. They are perfect for breakfast, tea time, or as a snack. This recipe will guide you through the process of making traditional crumpets at home using simple ingredients.

Ingredients:

1.25 cups milk (1% fat)
300g
2 tsp sugar
10g
1 tsp yeast
5g
1.50 cups all-purpose white wheat flour
190g
1 tsp salt
5g
1/2 cup water
120g
1 tsp baking soda
5g

Instructions:

1. Warm the Milk:
- Pour 1.25 cups of milk into a small saucepan and warm it over low heat until it is slightly warm to the touch (approximately 95°F or 35°C). Be careful not to overheat it.
2. Activate the Yeast:
- Stir in 2 teaspoons of sugar into the warm milk until it dissolves. Sprinkle 1 teaspoon of yeast over the milk mixture. Let it sit for about 5-10 minutes until it becomes frothy and bubbly.
3. Prepare the Batter:
- In a large mixing bowl, combine 1.50 cups of all-purpose white wheat flour and 1 teaspoon of salt. Create a well in the center of the flour mixture.
- Pour the frothy milk and yeast mixture into the well. Using a wooden spoon or a whisk, gradually mix the milk and flour together until you have a smooth batter.
4. Incorporate Water:
- Slowly add 1/2 cup of water to the batter, mixing continuously, until the batter is smooth and well-combined.
5. Let it Rise:
- Cover the mixing bowl with a clean kitchen towel or plastic wrap. Let the batter sit in a warm place for about 60 minutes, or until it has doubled in size and is bubbly.
6. Add Baking Soda:
- Dissolve 1 teaspoon of baking soda in a small amount of water (a few teaspoons), then stir it into the batter until fully incorporated.
7. Cook the Crumpets:
- Preheat a non-stick griddle or large frying pan over medium-low heat. Lightly grease the surface with a small amount of butter or oil.
- Place metal crumpet rings (about 3 inches in diameter) onto the griddle or pan. If you don't have crumpet rings, you can use cleaned and greased tuna cans with the tops and bottoms removed.
- Spoon about 2-3 tablespoons of the batter into each ring, filling them about halfway.
8. Cook Until Set:
- Cook the crumpets for about 5-7 minutes, or until the tops are set and full of holes (the tops should no longer look wet). Carefully remove the rings and flip the crumpets.
- Cook for an additional 2-3 minutes on the other side until they are lightly golden brown.
9. Serve:
- Transfer the cooked crumpets to a wire rack to cool slightly before serving. Serve warm with butter, jam, honey, or any topping of your choice.
10. Enjoy:
- Enjoy your homemade crumpets as a delightful breakfast or tea-time treat!

Tips:

- Make sure the milk is warm, not hot, when mixing with the yeast to ensure proper activation.

- Allow the batter to rest for at least 30 minutes to develop bubbles for the crumpets' characteristic holes.

- Use a non-stick griddle or frying pan to prevent the crumpets from sticking.

- Cook the crumpets on low heat to ensure they cook through without burning the bottoms.

- If you don't have crumpet rings, you can use cleaned tuna cans with both ends removed or egg rings.

- After cooking, let the crumpets cool slightly before toasting or adding toppings for the best texture.

Making crumpets at home is both fun and rewarding. With a bit of patience and attention to detail, you can achieve the perfect texture and flavor. Enjoy your homemade crumpets with your favorite toppings for a truly satisfying treat.
