- Potatoes: Peel and dice the potatoes into small cubes, about 1/2-inch size.
2. Cook the Leeks:
- In a large pot, add 2 teaspoons of olive oil and 1 tablespoon of butter over medium heat.
- Once the butter has melted and the oil is hot, add the sliced leeks.
- Sauté the leeks for about 5 minutes, stirring occasionally, until they are soft and translucent.
3. Add the Potatoes and Flour:
- Sprinkle 2 tablespoons of all-purpose flour over the sautéed leeks. Stir well to combine and cook for 1 to 2 minutes to remove the raw flour taste.
- Add the diced potatoes to the pot, stirring to coat them evenly with the leek and flour mixture.
4. Add the Chicken Gravy:
- Pour in 4 cups of chicken gravy, stirring continuously to prevent lumps from forming.
- Bring the mixture to a gentle boil, then reduce to a simmer. Cook for about 15-20 minutes, or until the potatoes are tender when pierced with a fork.
5. Prepare the Salmon:
- While the soup is simmering, cut the 10 oz of salmon into bite-sized pieces.
- Ensure all skin and bones are removed if not already done.
6. Add the Salmon:
- Once the potatoes are tender, gently add the salmon pieces to the pot.
