Funtastic chocolate cupcakes

Funtastic Chocolate Cupcakes are a delightful treat for any chocolate lover. These moist and fluffy cupcakes are simple to make and are perfect for any occasion, whether it’s a birthday party, a family gathering, or just a sweet indulgence. Using basic ingredients that you likely already have in your pantry, you can whip up these cupcakes in no time.

Ingredients:

1/2 cup butter
110g
3/4 cup sugar
150g
2 eggs
100g
1 tsp vanilla extract
4g
1 cup self-raising flour
150g
1/3 cup dry cocoa powder
50g
3/4 cup milk (1% fat)
180g

Instructions:

1. Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Line a 12-cup muffin tin with cupcake liners or lightly grease them.
2. Cream the Butter and Sugar:
- In a large mixing bowl, beat 1/2 cup butter (110g) until creamy.
- Add 3/4 cup sugar (150g) and continue beating until the mixture is light and fluffy.

3. Add Eggs and Vanilla:
- Crack 2 eggs (100g), one at a time, into the butter-sugar mixture, mixing well after each addition.
- Stir in 1 tsp vanilla extract (4g) until fully incorporated.
4. Combine Dry Ingredients:
- In a separate bowl, sift together 1 cup self-raising flour (150g) and 1/3 cup dry cocoa powder (50g).

5. Alternate Adding Dry Ingredients and Milk:
- Gradually add the dry mixture to the wet mixture in the large bowl, alternating with 3/4 cup milk (1% fat) (180g).
- Begin and end with the dry ingredients. Mix until just combined after each addition to avoid over-mixing. The batter should be smooth and lump-free.

6. Fill Cupcake Liners:
- Fill each cupcake liner about 2/3 full with the batter to allow space for the cupcakes to rise.
7. Bake:
- Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

8. Cool:
- Once baked, remove the cupcakes from the oven and allow them to cool in the tin for about 5 minutes.
- Transfer the cupcakes to a wire rack to cool completely.
9. Decorate (Optional):
- Once the cupcakes are completely cool, you can frost them with your favorite icing or enjoy them plain.

Tips:

- Make sure the butter is softened to room temperature to ensure a smooth batter.

- Use high-quality cocoa powder for a richer chocolate flavor.

- Do not overmix the batter; mix just until the ingredients are combined to keep the cupcakes tender.

- Fill the cupcake liners about two-thirds full to prevent overflowing during baking.

- Allow the cupcakes to cool completely before frosting to avoid melting the frosting.

With just a few simple ingredients and a little bit of time, you can create these Funtastic Chocolate Cupcakes that are sure to impress. Whether you decide to enjoy them plain or topped with your favorite frosting, these cupcakes will quickly become a favorite treat. Happy baking!
