6 tomatoes
1 cucumber
1 red pepper
1 onion
2 garlic cloves
1/3 cup olive oil
Gazpacho

Gazpacho is a classic cold Spanish soup, perfect for hot summer days. This refreshing dish combines fresh vegetables like tomatoes, cucumber, and bell pepper, blended with olive oil, vinegar, and bread to create a smooth and flavorful soup. Gazpacho is not only delicious but also healthy, making it a great addition to any meal.

Instructions:

1. Soak the Bread:
- Tear the white bread into smaller pieces and place them in a small bowl.
- Pour the vinegar over the bread pieces and let them soak while you prepare the other ingredients.
2. Prepare the Vegetables:
- Tomatoes: Core and chop the tomatoes into chunks suitable for blending.
- Cucumber: Peel the cucumber and cut it into chunks.
- Red Pepper: Remove the seeds and stem from the red pepper, then chop it into pieces.
- Onion: Peel the onion and chop it into chunks.
- Garlic: Peel the garlic cloves and leave them whole.
3. Blend the Ingredients:
- In a blender, combine the tomatoes, cucumber, red pepper, onion, garlic, and soaked bread.
- Blend until you achieve a smooth consistency. You may need to do this in batches if your blender is small.
4. Add Olive Oil:
- While the blender is running on a low setting, gradually drizzle in the olive oil. This helps to emulsify the mixture, giving the gazpacho a smooth texture.

5. Season and Chill:
- Season the gazpacho to taste with salt. You can also add more vinegar if you prefer a tangier flavor.
- If the gazpacho is too thick, add water a little at a time until the desired consistency is reached.
- Transfer the gazpacho to a large bowl or pitcher, cover, and refrigerate for at least 2 hours to allow the flavors to meld and to chill the soup thoroughly.
6. Serve:
- Stir the gazpacho before serving.
- Pour into bowls or glasses and garnish with a drizzle of olive oil or additional chopped vegetables, if desired.

Tips:

- Use ripe tomatoes for a richer flavor and better consistency.

- Chill the soup for a few hours or overnight to let the flavors meld.

- Serve with a drizzle of olive oil and garnish with finely chopped vegetables for added texture.

- If you prefer a chunkier soup, blend it less or pulse the blender.

- Soak the bread in water and squeeze out excess moisture before blending to achieve a smoother texture.

With its vibrant flavors and cooling properties, Gazpacho is the perfect dish to enjoy on a warm day. This simple yet elegant cold soup is sure to impress your family and friends. Remember to let it chill properly before serving to enhance its flavors. Enjoy your refreshing Gazpacho!
