- Toss the chicken in the marinade until each piece is well coated.

- While the chicken is marinating, wash and cut the 3 zucchini into thick slices or half-moons.
- Core and slice the 2 red peppers into strips.
5. Assemble the Bake:
- In a large baking dish, arrange the zucchini and red pepper slices evenly.
- Place the marinated chicken thighs on top of the vegetables.
6. Bake:
- Pour any remaining marinade over the chicken.
- Place the baking dish in the preheated oven.
