Instructions:

1. Prepare the Ingredients:
- Finely chop the red onion.
- Mince the garlic cloves.
- Grate the lemon to get the zest.
- Cut the cherry tomatoes in half.
- Crumble the feta cheese.
- Pit and halve the olives.
- Chop the spearmint leaves.
2. Cook the Pasta:
- In a large pot, bring water to a boil. Add a pinch of salt.
- Add the pasta and cook according to the package instructions until al dente.
- Drain the pasta, reserving a cup of pasta water, and set aside.
3. Prepare the Sauce:
- In a large skillet, heat 2 tbsp of olive oil over medium heat.
- Add the finely chopped red onion and cook until softened, about 5-7 minutes.

- Pour in the can of canned tomatoes and 1/2 cup of red wine. Stir to combine.

5. Combine:
- Stir in the halved cherry tomatoes and cook for an additional 5 minutes.
- Add the cooked pasta to the skillet, mixing everything together thoroughly.
- Adjust seasoning with salt and pepper to taste.
6. Finish the Dish:
- Remove the skillet from heat.
- Gently fold in the crumbled feta cheese and halved olives.
- Sprinkle the chopped spearmint on top.
