- In the same pot, add the diced onion, sliced carrots, and chopped celery.

- Add the minced garlic and sauté for an additional minute, until the garlic is fragrant.
4. Add Aromatics and Wine:
- Stir in the bay leaf and fresh thyme.
- Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow the wine to cook off for about 2 minutes.
5. Combine and Cook:
- Return the browned chicken thighs to the pot.

- Add the diced potatoes.
