3 slices prosciutto

3. Whisk the Eggs:
- In a mixing bowl, crack the 6 eggs.
- Add the 1/4 cup of milk (60g) and a pinch of salt and pepper to the eggs.
- Whisk the mixture well until the eggs and milk are fully combined.
4. Cook the Scrambled Eggs:
- In the same skillet, reduce the heat to low-medium and add 1 tablespoon of butter (16g). Let it melt completely.
- Pour the egg mixture into the skillet.
- Allow the eggs to cook without stirring for the first few seconds until they start to set slightly around the edges.
- Using a spatula, gently stir and push the eggs from the edges toward the center. Continue this process until the eggs are softly scrambled, with small curds forming but still slightly runny (about 5-7 minutes).
- Just before the eggs are fully cooked, add the chopped chives and give it a final gentle stir.
5. Assemble the Bagels (if using):
- On each toasted bagel half, layer a slice of crispy prosciutto.
- Spoon the scrambled eggs generously over the prosciutto.
6. Serve:
- Serve immediately, with additional salt and pepper to taste if desired.
