- Slice the celery.
- Slice the zucchini into half-moons.
- Halve the cherry tomatoes.

- Chop the fresh parsley.
2. Cook the Sausage:
- In a large pot or Dutch oven, heat 1 tbsp of olive oil over medium heat.
- Add the Italian sausage, breaking it into smaller pieces with a wooden spoon.
- Cook until the sausage is well-browned and fully cooked through, about 7-10 minutes. Remove the sausage from the pot and set aside.
3. Cook the Aromatics:
- Add 1 tsp of fennel seeds to the same pot and allow them to toast for about 1 minute until fragrant.
- Add the finely chopped onions and cook until they become translucent, about 3-4 minutes.
- Add the minced garlic and 1 tsp of fresh thyme, stirring for an additional minute.
4. Add the Vegetables:
- Add the sliced fennel bulbs, green beans, and celery to the pot.
- Cook for about 5 minutes, stirring occasionally, until the vegetables start to soften.
5. Combine Ingredients and Simmer:
- Add the zucchini, cherry tomatoes, and 1 tbsp of tomato puree to the pot.
- Pour in 1 cup of chicken broth, stirring to combine all ingredients.
- Return the cooked sausage to the pot.
- Allow the mixture to come to a boil, then reduce the heat to low and let it simmer for 15-20 minutes or until the vegetables are tender and the flavors have melded together.
6. Finish and Serve:
- Stir in 1 tsp of freshly chopped parsley right before serving.
- Taste and adjust seasoning as needed with salt and freshly ground black pepper.
- Ladle the stew into bowls and enjoy hot.

#### Tips:
- Serve with crusty bread to soak up the delicious broth.
- For a spicier kick, you can add red pepper flakes when cooking the sausage.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

Tips:

- For added richness, you can use Italian sausages with a mix of pork and beef.

- Brown the sausages thoroughly to get a deeper flavor before adding other ingredients.

- Be sure to slice the vegetables evenly to ensure they cook at the same rate.

- If you prefer a spicier stew, opt for hot Italian sausages or add a pinch of red pepper flakes.

- Consider doubling the recipe to have leftovers which usually taste even better the next day.

- Serve the stew with a sprinkle of freshly grated Parmesan cheese for an extra layer of flavor.

- Using homemade chicken soup or a high-quality store-bought broth can significantly enhance the taste.

Enjoy your hearty Italian Sausage and Vegetable Stew as a satisfying meal on its own or with a slice of crusty bread.
