Instructions:

1. Prepare the Ingredients:

- Slice the zucchini into half-moons.
- Halve the cherry tomatoes.
- Finely chop the onion.
- Mince the garlic.
- Chop the fresh parsley.
2. Cook the Sausage:
- In a large pot or Dutch oven, heat 1 tbsp of olive oil over medium heat.
- Add the Italian sausage, breaking it into smaller pieces with a wooden spoon.
