Ingredients:

Instructions:

1. Preheat Oven:
Preheat your oven to 375°F (190°C).
2. Prepare Sweet Potatoes:
- Peel and cut the sweet potatoes into small chunks.
- In a large pot, add the sweet potatoes and cover with water. Bring to a boil and let it simmer for about 15 minutes or until the potatoes are soft and tender.
- Drain the sweet potatoes and return them to the pot. Add 4 tablespoons (55g) of butter, and mash them until smooth. Set aside.
3. Prepare Vegetable Mix:
- While the sweet potatoes are cooking, finely chop the onion.
- In a large skillet over medium heat, add 3 tablespoons (40g) of olive oil.
- Add the chopped onion and sauté until it becomes translucent.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.

4. Add Vegetables and Seasoning:
- Finely chop the broccoli and carrots.
- Add the tomato paste, broccoli, carrots, soy sauce, garlic powder, and dried thyme to the skillet with the ground beef and onions.
- Stir to combine, allowing the mixture to cook for about 5 minutes until the vegetables are slightly tender.
5. Combine Filling and Coconut Milk:
- Pour the 1/4 cup (54g) of coconut milk into the beef and vegetable mixture, stirring well to combine everything.
6. Assemble the Shepherd’s Pie:
- Transfer the beef and vegetable mixture to a casserole dish, spreading it out evenly.
- Spoon the mashed sweet potatoes on top of the beef and vegetable mixture, spreading it evenly across the top.
7. Top and Bake:
- Dot the remaining 4 tablespoons (55g) of butter in small pieces on top of the mashed sweet potatoes.
- Place the casserole dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and the filling is bubbly.
8. Serve:
- Once baked, remove the dish from the oven and let it cool for a few minutes before serving.
- Cut into portions and serve warm.
