Instructions:

1. Prepare the Vegetables:

- Thinly slice the onion.
- Slice the mushrooms.
- Mince the garlic.
- Julienne the carrots.
2. Cook the Noodles:
- Bring a large pot of water to a boil.
- Add the mung bean noodles and cook according to the package instructions, usually about 5-7 minutes.
- Drain the noodles and rinse them under cold water to stop the cooking process. Set aside.
3. Blanch the Spinach:
- In the same pot of boiling water, quickly blanch the spinach for about 1-2 minutes until wilted.
- Drain the spinach and rinse it under cold water. Squeeze out any excess water and set aside.
4. Sauté the Vegetables:
- In a large pan or wok, heat 1 tablespoon of sesame oil over medium-high heat.
- Add the sliced onions and sauté until they become translucent, about 2-3 minutes.
- Add the minced garlic and cook for another minute, stirring constantly to prevent burning.
- Add the sliced mushrooms and julienned carrots. Cook for about 5-7 minutes, until the vegetables are tender but still crisp.
5. Prepare the Sauce:
- In a small bowl, mix the soy sauce and sugar until the sugar is completely dissolved.
6. Combine Everything:
- Add the cooked mung bean noodles and blanched spinach to the pan with the sautéed vegetables.
- Pour in the soy sauce mixture and the remaining 2 tablespoons of sesame oil.
- Toss everything together until well coated with the sauce and the noodles are heated through, about 2-3 minutes.
7. Serve:
- Transfer the Korean-style noodles with vegetables to a serving platter or individual bowls.
- Serve hot and enjoy!
