Ingredients:

4 sweet potatos

Instructions:

1. Preheat & Prepare:
- Preheat your oven to 200°C (390°F). Line a baking tray with parchment paper or a silicone baking mat.
2. Cook the Sweet Potatoes:
- Peel and dice the sweet potatoes into small cubes.
- Bring a large pot of water to a boil. Add the diced sweet potatoes and cook for about 10-12 minutes, or until tender. Drain and set aside to cool.
3. Prepare the Leek:
- While the sweet potatoes are cooling, heat the olive oil in a large frying pan over medium heat.
- Add the sliced leek and sauté for 5-7 minutes, or until softened and translucent. Remove from the heat and let cool slightly.
4. Combine the Filling:
- In a large mixing bowl, combine the cooked sweet potatoes, sautéed leeks, crumbled feta, grated cheddar, basil, and ground cumin. Mix gently to combine.
5. Prepare the Pastry:
- Lay out the puff pastry sheets on a lightly floured surface. Cut each sheet into quarters for smaller pastries, or in half for larger pastries.
- Spoon an even amount of the filling mixture onto the center of each pastry piece.
6. Seal and Brush:
- Fold the pastry over the filling to create a seal, pressing the edges together with a fork to ensure they are well sealed.
