Instructions:

1. Prepare the Zucchini:
- Preheat your oven to 400°F (200°C).
- Wash and trim the zucchini, then slice them into rounds about 1/4 inch thick.
- Place the zucchini slices on a baking sheet, drizzle with a tablespoon of olive oil, and season with salt and pepper.
- Toss to coat evenly, then spread the slices out in a single layer.
- Roast in the preheated oven for about 20-25 minutes, or until the zucchini is tender and lightly browned.

- While the zucchini is roasting, rinse and drain the canned chickpeas.
