1/2 cup pearl barley

Instructions:

- Place the pearl barley in a fine-mesh strainer.
- Rinse thoroughly under cold running water until the water runs clear. This helps to remove any dust or impurities.
2. Cook the Barley:
- In a medium-sized saucepan, add the rinsed barley and 6 cups of cold water.
- Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to low and let it simmer for 30 minutes, or until the barley is tender.
3. Strain the Barley:
- After cooking, strain the barley using a fine-mesh sieve.
- Reserve the barley water and set the barley grains aside (you can use the cooked barley in soups or salads).
4. Zest and Juice the Lemons:
- While the barley is cooking, zest the lemons using a fine grater or a zester. Be careful to avoid the white pith, which is bitter.
- After zesting, cut the lemons in half and juice them. You should get about 1/3 to 1/2 cup of lemon juice, depending on the size of the lemons.
5. Combine Ingredients:
- In a large pitcher, combine the strained barley water, lemon zest, lemon juice, and sugar.
- Stir the mixture well until all the sugar has dissolved.
6. Chill:
- Allow the lemon barley water to cool to room temperature, then place it in the refrigerator for at least 2 hours, or until thoroughly chilled.
