Meatballs & mash with caramelised onion

Meatballs and mash with caramelised onion is a hearty, comforting dish that's perfect for a family dinner. The softness of the mashed potatoes beautifully contrasts with the rich, savory meatballs, and the caramelised onions add a touch of sweetness to the meal. Additionally, the inclusion of apples brings a unique twist to the traditional recipe, making it both delightful and memorable.

Ingredients:

2 slices white bread
70g
14 oz ground beef (80/20%)
400g
2 garlic cloves
6g
2 tbsp lemon zest
30g
salt & pepper to taste
1 tbsp vegetable oil
16g
2 tbsp butter
30g
2 red onions
320g
2 apples
320g
5 potatoes
1000g
1/3 cup heavy whipping cream
72g

Instructions:

2. Make the Meatball Mixture:
- In a large bowl, combine the softened bread, ground beef, minced garlic, lemon zest, salt, and pepper.
- Mix thoroughly with your hands or a spoon until well combined.
3. Shape the Meatballs:
- Roll the mixture into small meatballs, about 1 to 1.5 inches in diameter. This should yield around 16-20 meatballs.
4. Cook the Meatballs:
- Heat the vegetable oil over medium-high heat in a large pan.
- Add the meatballs and cook, turning occasionally, until they are browned all over and cooked through (about 8-10 minutes).
- Remove the meatballs from the pan and set aside, keeping them warm.
5. Caramelise the Onions & Apples:
- In the same pan, add the butter and let it melt over medium heat.
- Add the sliced red onions and cook, stirring occasionally, until they start to soften (about 5 minutes).
- Add the sliced apples, season with a pinch of salt and pepper, and continue to cook until both onions and apples are caramelised and golden brown (about 10-15 minutes).
6. Prepare the Mashed Potatoes:
- While the onions and apples are cooking, place the chopped potatoes in a large pot of salted water.
- Bring to a boil and cook until the potatoes are tender and easily pierced with a fork (about 15-20 minutes).
- Drain the potatoes and return them to the pot.
- Add the heavy whipping cream and butter (if using), then mash until smooth. Season with salt and pepper to taste.
7. Serve:
- Plate a generous scoop of mashed potatoes in the center of each plate.
- Arrange the meatballs on top of the mashed potatoes.
- Spoon the caramelised onions and apples over the meatballs and mashed potatoes.

Tips:

- When making the meatballs, ensure the ground beef is well-mixed with the bread crumbs and seasoning to avoid any dry patches.

- Keep an eye on the onions while caramelising to ensure they don’t burn. Slow cooking is key to achieving the perfect caramelisation.

- To make the mashed potatoes extra creamy, consider adding a bit more butter or cream according to your preference.

- Using fresh garlic cloves instead of garlic powder can add a richer flavor to the meatballs.

- If you like a more tangy flavor, you can add a bit more lemon zest.

Meatballs and mash with caramelised onion is a simple yet delicious dish that combines savory, sweet, and tangy flavors seamlessly. By following these tips and steps, you can create a perfect meal for any occasion, impressing your family and guests alike. Enjoy your cooking experience!
