5. Caramelise the Onions & Apples:
- In the same pan, add the butter and let it melt over medium heat.
- Add the sliced red onions and cook, stirring occasionally, until they start to soften (about 5 minutes).
- Add the sliced apples, season with a pinch of salt and pepper, and continue to cook until both onions and apples are caramelised and golden brown (about 10-15 minutes).
6. Prepare the Mashed Potatoes:
- While the onions and apples are cooking, place the chopped potatoes in a large pot of salted water.
- Bring to a boil and cook until the potatoes are tender and easily pierced with a fork (about 15-20 minutes).
- Drain the potatoes and return them to the pot.
- Add the heavy whipping cream and butter (if using), then mash until smooth. Season with salt and pepper to taste.
7. Serve:
- Plate a generous scoop of mashed potatoes in the center of each plate.
- Arrange the meatballs on top of the mashed potatoes.
- Spoon the caramelised onions and apples over the meatballs and mashed potatoes.
