Mediterranean rice tarts

Mediterranean rice tarts are a delicious and versatile dish that brings the vibrant flavors of the Mediterranean to your table. Ingredients:

Instructions:

1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Cook the Rice:
- Rinse the white rice under cold water until the water runs clear.
- In a medium saucepan, combine the rice and 2 cups of chicken gravy.
- Bring to a boil over medium-high heat, then reduce the heat to low.
- Cover and let simmer for about 15-18 minutes, or until the rice is fully cooked and has absorbed the gravy. Set aside to cool.
3. Prepare the Vegetables:
- While the rice is cooking, finely chop the half onion, red pepper, and zucchini.
4. Cook the Vegetables:
- In a large skillet, heat a little olive oil over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
- Stir in the chopped red pepper and cook for another 3-4 minutes.
- Add the chopped zucchini and cook everything together until the vegetables are tender, about 5-6 minutes.
- Season with salt and pepper to taste, then remove from heat.
5. Combine Rice and Vegetables:
- In a large mixing bowl, combine the cooked rice with the sautéed vegetables.
- Add the 2 tablespoons of tomato puree and mix well to evenly distribute.
6. Assemble the Tarts:
- Lightly grease a muffin tin or tart molds.
- Spoon the rice and vegetable mixture into each mold, pressing down slightly to ensure they hold together.
- Sprinkle the grated parmesan cheese evenly over the top of each tart.
7. Bake:
- Place the muffin tin or tart molds in the preheated oven.
- Bake for about 20-25 minutes, or until the cheese is melted and the tops are golden brown.
8. Serve:
- Allow the tarts to cool slightly before removing them from the molds.
- Serve warm, optionally garnished with fresh herbs or a squeeze of lemon juice for an extra zesty flavor.
