Moroccan beef, eggplant and chickpea bake

Ingredients:

Instructions:

1. Preheat Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Eggplant:
- Slice the eggplant into rounds, approximately 1/4 inch thick. Set aside.
3. Cook the Ground Beef:
- In a large skillet, heat 1 tbsp of olive oil over medium heat.
- Add the ground beef to the skillet and cook until browned, breaking the meat apart with a spoon as it cooks, about 8-10 minutes.
4. Add Spices and Liquids:
- Stir in the 1/2 cup of spice mix until the beef is evenly coated.
- Add the canned tomatoes (with juice) and the beef broth.
- Stir well and bring to a simmer. Allow to cook for about 10 minutes, letting the flavors meld.
5. Prepare the Chickpeas:
- Drain and rinse the chickpeas.
- Add 1/3 can (130g) of chickpeas to the beef mixture.
- Stir to combine, and let it cook for another 5 minutes. Remove from heat.
6. Layer the Bake:
- In a large baking dish, layer half of the eggplant slices on the bottom.
- Spoon half of the beef mixture over the eggplant slices.
- Slice the fresh tomatoes and layer half of them over the beef mixture.
- Repeat the layers with the remaining eggplant, beef mixture, and fresh tomatoes.
7. Top with Cheese:
- Sprinkle the grated parmesan cheese evenly over the top of the layered mixture.
8. Bake:
- Cover the baking dish with aluminum foil.
- Bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15 minutes or until the top is golden and bubbly.
9. Serve:
- Remove the bake from the oven and let it cool slightly before serving.
