Mushroom pilaf is a delightful and flavorful dish that combines the earthy tones of mushrooms with the rich creaminess of parmesan cheese. Ingredients:

Instructions:

1. Prepare the Ingredients:
- Thinly slice the leek after thoroughly washing it to remove any dirt.
- Slice the mushrooms into thin pieces.
- Chop the fresh thyme leaves.
2. Cook the Leek and Mushrooms:
- In a medium-sized saucepan, heat 2 tsp of butter and 2 tsp of olive oil over medium heat.
- Add the sliced leek to the saucepan, cooking and stirring occasionally until the leek is softened and turning translucent, about 5 minutes.
- Add the sliced mushrooms to the pan and cook until they are tender and any released moisture has evaporated, about another 5 minutes.
3. Combine Rice and Spices:
- Stir in the basmati rice, ensuring it gets well-coated with the butter and oil mixture.
- Add the bay leaf and chopped fresh thyme to the saucepan.

4. Add the Chicken Gravy:
- Pour in the 2/3 cup of chicken gravy, stirring well to combine all the ingredients.
- Bring the mixture to a boil.
5. Simmer the Pilaf:
- Once boiling, reduce the heat to low, cover the saucepan with a lid, and let it simmer.
- Cook for about 15-20 minutes, or until the rice is tender and has absorbed all the liquid.

6. Finish and Serve:
- Remove the bay leaf and discard it.
- Stir in the grated parmesan cheese until it melts and is well incorporated into the pilaf.
- Taste and adjust the seasoning if necessary, adding salt and pepper to taste.

7. Serve:
- Fluff the pilaf gently with a fork and serve hot.
