Instructions:

1. Prepare Your Ingredients: Start by dicing the potatoes into small, evenly sized pieces. Zest the lemons until you have 2 tablespoons of zest, and juice the lemons until you have 1/3 cup of lemon juice.
2. Heat the Olive Oil: In a large, heavy-bottomed pot or Dutch oven, heat the 1 tablespoon of olive oil over medium-high heat.
3. Brown the Chicken: Once the oil is hot, add the 4 chicken thighs to the pot. Sear them for 5-7 minutes on each side until they are golden brown. Remove the chicken from the pot and set aside.
